Tip Spotlight - Crock Pot Recipes

 

 

 

 

Easy to make recipes that will have your mouth watering all day. 

Shawna’s Minestrone

                                                                      

INGREDIENTS:

1lb   Italian sausage (hot)

1lb   hamburger

6  clove’s garlic, chopped

1/4  cup oregano chopped, fresh

˝  cup basil chopped, fresh

1  cup parsley chopped, fresh

2 ˝  cups  onions, chopped (1lrg or 2med)

2  cups cabbage, chopped (1/2 small head)

2  cups celery, chopped (6 stalks)

2  cups  carrots, sliced into circles (6 or 7)

2  cups frozen green beans (one 16oz bag)

2  8oz cans chicken broth

1  8 oz can beef broth

1  16oz can tomato sauce ( big can/4cups)

1  8oz can crushed or small diced tomatoes

1  16oz (big can) kidney beans, drained

1 1/2-2 cups water

1/2-1  cup red wine (optional)                                           

salt and pepper to taste

crushed red peppers to taste

1pkg big seashell pasta

Parmesan cheese for topping to taste

Directions:

1.   Cook sausage and hamburger, together is fine, drain grease.

2.   Add to Crock pot meat, garlic, fresh spices, both cans of tomatoes, kidney beans and last but not least all the vegetables, mix together. 

Or if needed add all the above together in a large bowl or big pot and mix together, then add to the crock pot (like I had to do).

3.   Add both broths, wine and water to the Crock pot. Use less water if needed, not to overlow the crock pot, more water can be added later when there is more room.

4.   Top w/salt, pepper and crushed red peppers to taste.

5.   Cook in Crock pot on low heat for 9-10hours.

6.   Cook pasta seashells, follow direction on the pkg.  Keep separate from Minestrone until ready to eat.  If added to the crock pot noodles will get soggy.

7.   Add pasta seashells to each bowl then add Minestrone and top with Parmesan cheese how ever much you want.

8.   Enjoy
